Speculaas Koekjes (cookies made with cinnamon, ginger, cloves, dark brown sugar) are traditionally served in the Netherlands on St.Nicholas Day. The cookies are often cut in the shape of St. Nicholas. Some people also use a speculaasplank (special cookie board mould) to emboss designs right onto the cookie. The ginger shortbread cookies we make aren't quite the same (no cinnamon or cloves) but they are awfully good!

St. Nicholas was/is renowned for his generosity and charitable acts.

A recent report has stated that one in four households in Toronto is subsisting in poverty. Worldwide, the numbers are more staggering. As we are preparing our feasts, let's emulate St. Nicholas and remember to feed the truly hungry as well:
